Recently, I was playing around in the kitchen and working on a recipe for banana muffins. Well, I got a little carried away and maybe a little cocky, and I created…a total miss!
Wah-wah.
So, after pouting for a day or two, I made some revisions to my recipe, channeled my frustration and tried, tried again! Having bananas in the apartment that were turning a bit brown certainly added to my motivation, too.
And now, I’m proud to share my new and improved, revised recipe for Whole Wheat Banana Bread!
Suck it, First Batch!
- Whole Wheat Banana Bread
Dry ingredients:
- -1½ cups whole wheat flour
- -½ cup rolled oats
- -2 teaspoons baking powder
- -½ teaspoon baking soda
- -½ teaspoon salt
- -1 tablespoon wheat germ
- -1 teaspoon ground ginger
Wet ingredients:
- -1 teaspoon almond extract
- -3 tablespoons vegetable oil (I like to use safflower oil)
- -⅓ cup maple syrup
- -1 egg, lightly beaten
- -½ cup milk (I used ¼ cup skim and ¼ cup whole)
- -2 large or 3 small mushy bananas, pureed
Preparation:
Preheat the oven to 350°.
Combine all of the dry ingredients in a small bowl. Whisk the wet ingredients together in a large bowl. Slowly stir the dry ingredients into the wet ingredients. Stir only until it is all combined- don’t over stir. Pour the mixture into a greased 8×8-inch baking dish and bake for 30 minutes or until a toothpick comes out dry.
- Variations:
- -Make Banana Muffins by pouring the mixture into a greased muffin tin or cupcake liners
- -Add chopped walnuts or chopped peanuts
I SO WISH I had a video camera on Eliana when I gave her a taste of this bread for the first time. I was holding her at the counter and gave her a sample as I was cutting a few pieces for us to share for a snack. She took the bite, her eyes got really big and wide, and she let out a huge squeal of happiness and hugged me. It was so funny! And of course, not at all captured on video.
Aargh!
But, I did get a video of her eating another batch of the banana bread. While her reaction is pretty funny, especially if you listen to her as she walks away, it isn’t nearly as great as the one I wasn’t able to capture. Of course, right? Click here to visit our Youtube channel and watch the video.
