Stone Fruit & Sage Purée

Featured Tool:

Place nectarine and water into a large saucepan. Cover and simmer over low heat, stirring once or twice, for around 5 minutes or until the nectarine begins to soften.

Stir in the rest of the fruit and cover.  Continue to simmer, stirring occasionally, for around 15 more minutes or until all the fruit has softened. Add in the sage, stir and cook for another 2 minutes.

Pour mixture into the food mill and purée to desired consistency. Scrape the bottom of the mill so you get all of the bits of purée.

You can recruit your own teeny tiny Sous Chef to help you.

Let cool slightly before serving.

Yields approximately ¾ cup or 6 ounces.
